When Steely Pate gives Dunk his newly painted shield, they discuss the auspicious merit of various heraldic sigils. Pate mentions having seen shields adorned with, among other things, hanged men and reminds Dunk that they served their wielders well enough.

The Mystery Knight

Early on in The Mystery Knight it is mentioned that Dunk, having had his shield destroyed in battle in The Sworn Sword, recently bought a new shield during his stay at Stoney Sept.

The shield has not been painted since his last owner and therefore still features a man hanged man as its sigil - most likely the personal coat of arms for some member of House Trant. This eventually inspires Dunk to adopt the temporary alias of "The Gallows Knight" to go incognito for a while.
